  • 4 chicken fillets
  • 5.5 ounces spicy Spanish chorizo (diced)
  • 9 ounces canned corn (drained)
  • 1 small onion (finely chopped)
  • ½ cup dry white wine
  • ⅔ cup whole milk
  • 5.5 ounces cream cheese
  • 2 tbsp olive oil
  • 2 garlic cloves (minced, divided)
  • 1 tsp dried oregano
  • 1 tbsp salted butter
  • salt
  • black pepper
  • smoked paprika
  • garlic powder

Instructions

  1. Season the chicken fillets with salt, black pepper, smoked paprika, and garlic powder.
  2. In a non-stick skillet, heat olive oil and cook diced chorizo until crispy. Add corn and half of the minced garlic; cook until golden brown.
  3. Remove chorizo and corn mixture from the skillet. Add butter and brown the seasoned chicken on both sides until cooked through.
  4. Sauté onion and remaining garlic in the same skillet until softened. Deglaze with white wine; simmer before adding milk.
  5. Stir in cream cheese until melted. Return chicken to the skillet; simmer briefly to combine flavors.
  6. Serve topped with the chorizo-corn mix and enjoy!
