  • 500g chicken breast, cut into chunks
  • 4 garlic cloves, minced
  • 1 cup heavy cream or cooking cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)
  • Salt & pepper (to taste)
  • 300g baby potatoes, halved
  • Dried herbs (rosemary or thyme)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, toss halved baby potatoes with olive oil, salt, pepper, and dried herbs until evenly coated. Spread them on a baking tray cut-side down.
  3. Roast the potatoes for about 20 minutes or until golden brown.
  4. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken chunks, searing them until golden brown on both sides (about 4–5 minutes per side).
  5. Add minced garlic to the skillet, sautéing briefly until fragrant (about 30 seconds).
  6. Pour in heavy cream and add Dijon mustard; stir gently and let simmer for about 5–7 minutes until the sauce thickens.
  7. Serve the creamy chicken bites alongside roasted baby potatoes and garnish with fresh parsley.
