  • 3 chicken breasts, sliced
  • 700 g baby potatoes, halved
  • 6 cherry tomatoes
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt
  • Black pepper
  • 1 tsp paprika
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss halved baby potatoes in olive oil, salt, and pepper; spread on a baking tray and roast for 30–35 minutes until golden.
  3. In a skillet, heat olive oil over medium heat; season chicken with salt, pepper, and paprika. Sear the chicken slices for about 5–6 minutes per side until golden brown.
  4. In the same skillet, sauté minced garlic for 30 seconds until fragrant. Add heavy cream and chicken broth; stir in grated Parmesan cheese and dried herbs. Simmer for 3–5 minutes until thickened.
  5. Return seared chicken to the pan with the sauce; simmer for an additional 2–3 minutes.
  6. Add cherry tomatoes to the baking tray during the last 10 minutes of potato roasting.
  7. Serve chicken topped with sauce alongside roasted potatoes and tomatoes; garnish with fresh parsley.
