  • 4 boneless chicken breasts
  • 200g mushrooms, sliced
  • 3 garlic cloves, minced
  • 200ml heavy cream
  • 1 tbsp Dijon mustard
  • 500g baby potatoes, halved or quartered
  • Juice of 1 lemon
  • 200g spaghetti or linguine
  • 1 tbsp olive oil
  • 1 tbsp butter

Instructions

  1. Preheat oven to 200°C (390°F). In a bowl, toss baby potatoes with olive oil, butter, salt, pepper, and Italian seasoning. Spread on a baking sheet and roast for 30–35 minutes.
  2. Cook the pasta in salted boiling water until al dente, then drain and toss with olive oil.
  3. Season chicken breasts with salt and pepper. In a skillet, heat olive oil and butter over medium heat. Sear chicken for 5–6 minutes per side until golden brown and cooked through (internal temp of 74°C/165°F). Remove from skillet.
  4. In the same skillet, add mushrooms and sauté until tender. Stir in garlic; cook for another minute. Add heavy cream, Dijon mustard, thyme; simmer until thickened.
  5. Return chicken to the skillet to coat in the sauce. Serve over pasta alongside roasted potatoes.
