Ingredients
Scale
1 lb boneless, skinless chicken breasts
1 cup long-grain white rice
2 cups chicken broth
1/2 cup honey
1/4 cup Dijon mustard
1 cup shredded pepper jack cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon chopped fresh parsley (for garnish)
Instructions
In a medium saucepan, combine the rice and chicken broth. Bring to a boil, then reduce heat and cover. Cook for 15-18 minutes until liquid is absorbed. Let rest covered for an additional 5 minutes and fluff with a fork.
While the rice is cooking, heat olive oil in a large skillet over medium heat. Season chicken with garlic powder, onion powder, salt, and black pepper. Cook chicken for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F.
In a small bowl, whisk together honey and Dijon mustard. Pour this mixture over the cooked chicken and simmer for 2-3 minutes.
Sprinkle shredded pepper jack cheese over the chicken, cover the skillet, and reduce heat to low. Allow cheese to melt for about 2-3 minutes.
Serve the cheesy chicken over the fluffy rice and garnish with fresh parsley.
