4 thin boneless skinless chicken breasts
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons Italian seasoning
2 tablespoons olive oil
12 oz spaghetti
4 tablespoons butter
1 small yellow onion (chopped)
4 garlic cloves (minced)
2 small tomatoes (diced)
1 tablespoon flour (for thickening)
1 cup heavy cream
1 cup white grape juice
1/2 cup Parmesan cheese (shredded)
1 teaspoon Italian seasoning (for extra flavor boost)
1/2 teaspoon salt (more to taste)
1/4 teaspoon crushed red pepper flakes
Pat chicken dry and dredge in a mixture of flour, salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown on both sides and cooked through (about 4-5 minutes per side). Remove from the skillet and cover.
In the same skillet, melt butter and sauté onions until translucent. Add minced garlic and diced tomatoes; cook for an additional minute.
Stir in a tablespoon of flour, then gradually add heavy cream and white grape juice while stirring continuously.
Mix in Parmesan cheese until melted and combined. Adjust seasoning as necessary.
Return the chicken to the skillet to coat with sauce before serving over cooked spaghetti.
