  • 1 lb shrimp (deveined and shelled)
  • 4 oz sun-dried tomatoes
  • 1 cup half-and-half
  • 1 cup shredded mozzarella cheese
  • 3 garlic cloves (minced)
  • Olive oil
  • Dried basil
  • Red pepper flakes
  • Paprika
  • Salt

Instructions

  1. Cook the penne pasta according to package instructions in salted water. Drain and reserve ½ cup of pasta water.
  2. In a skillet, heat olive oil over medium heat. Add shrimp seasoned with salt, cooking until pink and opaque. Remove from skillet.
  3. In the same skillet, sauté minced garlic and sun-dried tomatoes for about 2 minutes. Stir in half-and-half and gradually add mozzarella until melted.
  4. Combine cooked shrimp and pasta with the sauce, adding reserved pasta water for desired creaminess. Season with dried basil, red pepper flakes, paprika, and additional salt if necessary.
  5. Serve hot, garnished with fresh basil or more red pepper flakes.
