  • 1 sheet puff pastry, thawed
  • 200g mushrooms, finely chopped
  • 150g fresh spinach
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 100g cheese (mozzarella or cheddar), grated
  • 2 tablespoons cream cheese
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onion and garlic until translucent. Add mushrooms and cook until softened; stir in spinach until wilted. Season with salt and pepper.
  3. Remove from heat and mix in grated cheese and cream cheese until combined.
  4. Roll out the puff pastry on a floured surface and cut into 24 squares.
  5. Place a teaspoon of filling in the center of each square. Fold to form triangles or rectangles, sealing edges firmly.
  6. Brush tops with beaten egg for a golden finish.
  7. Arrange on a baking sheet lined with parchment paper and bake for 20–25 minutes until golden brown.
  8. Allow to cool for 10 minutes before serving.
