  • 2 lbs chicken (cut into thin strips)
  • 1 white onion (diced)
  • 2 tbsp garlic (diced)
  • 1/2 cup roasted red pepper (drained and sliced)
  • 1/2 cup pepperoncini peppers (drained; sliced or whole)
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese (shredded)
  • 2 tbsp butter
  • 1/2 cup chicken stock
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 tbsp Italian seasoning

Instructions

  1. Melt butter in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper; brown in the skillet for about 8 minutes.
  3. Remove chicken and sauté onions and garlic in the same pan for about 5 minutes.
  4. Add chicken stock and roasted red peppers; reduce by half over another 5 minutes.
  5. Stir in heavy cream and parmesan until smooth.
  6. Return chicken to the skillet along with pepperoncini and Italian seasoning; cook until sauce thickens and chicken reaches an internal temperature of 165°F.
  7. Serve hot over rice, pasta, or vegetables.
