  • 2 Tablespoons tomato paste
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 ½ teaspoons dried basil leaves
  • ½ cup butter
  • ½ cup all-purpose flour
  • 1 cup freshly grated parmesan cheese
  • 1 ½ cups half-and-half (or whole milk)
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup chopped fresh basil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add finely diced carrots, onion, and celery; sauté for about 5 minutes until softened.
  2. Stir in canned diced tomatoes (with juice), tomato paste, and chicken broth along with dried oregano and basil. Bring to a simmer.
  3. Blend the mixture using an immersion blender until smooth.
  4. In a separate pot, melt butter over medium-low heat and whisk in flour until golden brown to create a roux.
  5. Gradually incorporate the blended soup into the roux until well combined.
