  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • Juice from ½ small lime
  • Salt and freshly ground black pepper to taste
  • 2 (15 oz) cans great northern beans, drained and rinsed
  • 1 cup sour cream (or plain Greek yogurt)
  • 1 cup corn (frozen or fresh)
  • 2 heaping cups cooked shredded chicken
  • Fresh cilantro for garnish
  • Shredded cheese (preferably Monterey Jack or cheddar) for garnish
  • Tortilla chips for serving
  • Green onions, sliced for garnish
  • Avocado slices for garnish

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add chopped onion and sauté until softened.
  2. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Pour in low-sodium chicken broth along with diced green chiles, cumin, cayenne pepper, oregano, paprika, and lime juice; stir well.
  4. Add drained great northern beans and corn to the pot; consider pureeing some beans for creaminess if desired.
  5. Bring the mixture to a gentle simmer for 15–30 minutes while stirring occasionally.
  6. Remove from heat; stir in sour cream and shredded chicken until well combined.
