  • 2 cups cooked brown rice or white rice (or cauliflower rice)
  • 4 cups chopped romaine or spinach
  • 1 avocado (diced)
  • 1 cup shredded carrots
  • 1 cup cherry tomatoes (halved)
  • ½ cup diced celery
  • ¼ cup diced red onion
  • ¼ cup crumbled blue cheese or shredded cheddar (optional)
  • ¼ cup ranch or blue cheese dressing (or Greek yogurt dressing)
  • Fresh cilantro or green onions (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken with salt, pepper, garlic powder, and paprika. Cook for 6-7 minutes on each side until golden brown and cooked through (165°F).
  3. Remove chicken from the skillet and let rest for 5 minutes before slicing or shredding.
  4. Toss the warm chicken with buffalo sauce until evenly coated.
  5. In bowls, layer cooked rice or greens, followed by buffalo chicken, diced avocado, shredded carrots, and cherry tomatoes.
