  • 2 lbs boneless, skinless chicken breasts
  • 1 lb fresh baby carrots
  • 1 lb Yukon Gold potatoes, cut into wedges
  • 1/2 cup salted butter, melted
  • 3 tbsp minced garlic
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp salt (kosher or table)
  • 1/4 tsp freshly ground black pepper
  • 1/2 cup chicken broth (optional)

Instructions

  1. Place the chicken breasts at the bottom of a greased crockpot.
  2. Add baby carrots and Yukon Gold potato wedges on top of the chicken.
  3. In a bowl, mix melted butter, minced garlic, thyme, parsley, salt, and pepper until combined.
  4. Pour the garlic herb mixture evenly over the layered ingredients.
  5. If using, pour chicken broth around the edges of the crockpot.
  6. Cover and set on low for 6-8 hours or high for 3-4 hours until the chicken reaches an internal temperature of 165°F (75°C).
  7. Serve warm and enjoy every comforting bite.
