Ingredients

Scale
  • 1 cup granulated sugar
  • 3 cups water
  • 5 cups fresh or frozen strawberries (cleaned and quartered, about 2 pounds)
  • 2 tbsp lemon juice (or lime juice)

Instructions

  1. Prepare strawberries by rinsing them under cool water; hull and quarter fresh ones.
  2. In a medium saucepan, combine 3 cups of water and 1 cup of sugar over medium-high heat. Stir until simmering and sugar dissolves.
  3. Remove from heat and let the syrup cool completely (use an ice bath to speed this up if desired).
  4. In a large bowl, mix the cooled syrup with lemon or lime juice and prepared strawberries.
  5. Blend the mixture until smooth in a blender or food processor.
  6. Pour into a freezer-safe container, cover tightly, and freeze for at least 6 hours or overnight.
  7. Before serving, let it sit at room temperature for a few minutes to soften.
