  • 1/4 cup diced onion
  • 1 large carrot (34 oz)
  • 2 tbsp tomato paste
  • 1 1/4 cups lentils (brown or green)
  • 12 oz potatoes (cut into bite-sized pieces)
  • 45 cups water or vegetable stock
  • Salt
  • Black pepper
  • Thyme
  • Oregano

Instructions

  1. Heat the oil in a large pot or Dutch oven over medium heat.
  2. Sauté the onion for about 1 minute, then add garlic and carrots, cooking for an additional 2-3 minutes until softened.
