  • 4 pounds Campari tomatoes (or ripe heirloom tomatoes)
  • 3 tablespoons olive oil
  • 1 large onion, cut into 8 pieces
  • 12 cloves garlic, halved
  • 1 tablespoon kosher salt (to taste)
  • 1 tablespoon oregano
  • 1 teaspoon smoked paprika
  • 1 cup vegetable broth (or chicken stock)
  • ¼ cup heavy cream (plus more for serving)
  • ½ cup fresh basil (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the tomatoes in half and place them on a baking sheet.
  2. Drizzle tomatoes with olive oil, sprinkle with salt, oregano, and smoked paprika. Add onion pieces and garlic cloves.
  3. Roast for about 25–30 minutes until soft and slightly charred.
  4. Allow the mixture to cool slightly, then transfer to a blender. Add vegetable broth and blend until smooth.
  5. Pour back into the pot over medium heat; stir in heavy cream until warmed through.
  6. Garnish with fresh basil before serving.
