1 lb large shrimp, peeled and deveined
1 cup long-grain white rice
2 tbsp olive oil
3 tbsp unsalted butter
5 cloves garlic, minced
1 tsp paprika
½ cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
1 tbsp lemon juice
Salt and pepper to taste
2 cups water or chicken broth (for cooking rice)
1 tbsp butter (for cooking rice)
In a medium saucepan, combine rinsed rice with 2 cups water or chicken broth, add salt and butter. Bring to a boil, then reduce heat to low and cover for about 18-20 minutes until tender.
In a large skillet over medium-high heat, heat olive oil and add shrimp seasoned with salt, pepper, and paprika. Cook for 1-2 minutes on each side until pink and opaque. Remove from skillet.
In the same skillet, melt butter, then sauté minced garlic until fragrant (about 30 seconds). Add chicken broth to deglaze the pan.
Stir in heavy cream and Parmesan cheese. Let simmer for 3-5 minutes until thickened.
Add back the shrimp along with lemon juice and optional red pepper flakes. Toss until well-coated.
Spoon creamy shrimp over fluffed rice.
