  • 2 cups cooked rice (preferably day-old)
  • 2 chicken breasts or thighs, diced
  • 2 tbsp teriyaki sauce (plus more to taste)
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, lightly beaten
  • 2 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil or vegetable oil

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat. Add diced chicken and cook for about 5–7 minutes until golden brown.
  2. Drizzle in teriyaki sauce and stir until chicken is evenly coated. Remove from pan and set aside.
  3. In the same skillet, pour in beaten eggs and scramble until fluffy; push to one side of the pan.
  4. Add mixed vegetables to the pan and sauté for 2–3 minutes until softened.
  5. Return chicken to the skillet along with cooked rice; break up clumps and mix well.
  6. Pour soy sauce and additional teriyaki sauce over rice mixture; stir-fry for another 2–3 minutes until heated through.
  7. Garnish with sliced green onions before serving.
