- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 14 oz coleslaw mix (shredded cabbage & carrots)
- 3 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- Salt and pepper to taste
- Green onions (for garnish)
- Heat a large skillet over medium-high heat and add sesame oil. Once shimmering, add diced onion, garlic, and ginger; sauté until fragrant.
- Add ground beef (or turkey/chicken) to the skillet, breaking it apart as it cooks until browned (5-7 minutes).
- Stir in the coleslaw mix and cook until slightly softened while maintaining crunch.
- Pour in soy sauce and rice vinegar; stir well to combine all ingredients. Season with salt and pepper.
