  • 1 ½ pounds skinless, boneless chicken thighs
  • 2 calabresa sausages
  • 1 cup white long-grain rice
  • 2 ½ cups chicken broth
  • ½ cup white wine
  • 1 onion (peeled)
  • 3 garlic cloves (peeled)
  • 1 large carrot (finely diced)
  • 2 Roma tomatoes (chopped)
  • ½ cup fresh parsley
  • 1 tablespoon ground turmeric
  • 1 tablespoon apple cider vinegar
  • ½ cup olive oil
  • Salt and freshly ground pepper (to taste)
  • 1 teaspoon olive oil
  • 2 bay leaves

Instructions

  1. Chop the onion, carrot, and tomatoes; cut chicken into 1-inch pieces.
  2. In a large pot, heat olive oil over medium heat. Sauté onion until translucent; add minced garlic.
  3. Add chicken; season with salt, pepper, turmeric, and vinegar. Cook until browned.
  4. Stir in sliced sausages and diced carrots; add white wine and cook for 5 minutes.
  5. Mix in rinsed rice along with bay leaves and chicken broth. Bring to a boil; cover and simmer for 30 minutes.
  6. Remove from heat; discard bay leaves and stir in chopped tomatoes and parsley before serving.
