- 12 oz rigatoni pasta
- 1 ½ lb boneless skinless chicken breasts
- 2 tbsp olive oil
- 5 tbsp unsalted butter
- 5 cloves garlic
- ¾ cup chicken broth
- 1 cup freshly grated Parmesan cheese
- Salt and freshly cracked black pepper to taste
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tsp Italian seasoning
- 2 tbsp all-purpose flour
- Cook the rigatoni according to package instructions until al dente. Reserve half a cup of cooking water before draining.
- In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook until golden brown on both sides. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant. Whisk in flour for 2 minutes to create a roux.
- Gradually add chicken broth while whisking until smooth, then stir in Parmesan until melted and creamy.
- Combine cooked rigatoni and chicken with the sauce in the skillet, tossing gently to coat. Adjust with reserved pasta water if needed.
