  • ¼ cup ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1 lb Yukon Gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Heat a large cast iron skillet over medium heat. Add olive oil and two tablespoons of ghee until melted.
  2. Add potato cubes, minced garlic, thyme, oregano, salt, and pepper. Cook undisturbed for about 2-3 minutes to develop a golden crust.
  3. Stir gently and cook for another 8-10 minutes until fork-tender. Set aside.
  4. Increase heat to medium-high and add remaining ghee to the skillet. Season steak cubes with salt and pepper; sear undisturbed for at least 2 minutes until browned.
  5. Stir occasionally for another minute until cooked through.
  6. Return potatoes to the skillet; toss everything together and adjust seasoning if needed.
  7. Garnish with fresh parsley before serving.
