  • 1 lb sirloin or ribeye steak, cut into cubes
  • 12 oz rotini pasta
  • 3 tbsp unsalted butter (for steak)
  • 2 tbsp unsalted butter (for sauce)
  • 6 cloves garlic, minced (divided)
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 cups sharp cheddar cheese, shredded
  • ½ cup Parmesan cheese, grated
  • Cajun seasoning and smoked paprika to taste

Instructions

  1. 1. Boil a large pot of salted water and cook rotini according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  2. 2. In a saucepan, melt 2 tbsp butter over medium heat. Sauté half the minced garlic until fragrant. Add heavy cream and milk, stirring until smooth. Gradually whisk in cheddar and Parmesan until melted. Season with salt, pepper, and Italian seasoning.
  3. 3. Pat the steak dry and season with Cajun seasoning, smoked paprika, salt, and pepper. Heat olive oil in a cast-iron skillet over medium-high heat. Sear steak for 2-3 minutes on each side until browned and desired doneness is reached; remove from skillet.
  4. 4. In the same skillet, lower heat slightly, add remaining butter and garlic; stir for a minute. Baste steak tips in garlic butter.
  5. 5. Combine cooked rotini with cheese sauce until evenly coated; add reserved pasta water if necessary for consistency.
  6. 6. Serve rotini topped with steak tips and garnished with fresh parsley.
