  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 6 cloves garlic, minced
  • 14 oz rotini
  • 3 tbsp butter (for sauce)
  • 4 cloves garlic (for sauce), minced
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella
  • 1 cup freshly grated Parmesan
  • ½ tsp white pepper (optional)
  • ½ tsp salt (for sauce)

Instructions

  1. Start by bringing a large pot filled with salted water to boil over high heat. Once boiling, add your 14 ounces of rotini and cook until al dente according to package instructions. Reserve about 1 cup from the drained water before draining completely.
  2. While waiting for the noodles, pat down the chicken with paper towels until dry and season with salt, pepper, garlic powder, and Italian herbs.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat and add the chicken. Cook until golden brown and cooked through, about 7–10 minutes. Remove from heat and keep warm.
  4. In a separate large skillet, melt 3 tablespoons of butter over medium heat. Add the minced 6 cloves of garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the heavy cream and bring to a gentle simmer. Whisk in the softened cream cheese until smooth.
  6. Stir in the shredded mozzarella and grated Parmesan cheese until melted and combined. Adjust consistency with reserved pasta water if needed.
  7. Toss the cooked rotini into the sauce until well coated.
  8. Serve the creamy rotini topped with the garlic herb chicken.
