  1. Cook spaghetti in a large pot of salted boiling water until al dente (8-10 minutes). Drain and reserve some pasta water.
  2. In a large skillet over medium-high heat, add olive oil and sauté the diced chicken until golden brown (about 6-8 minutes). Remove from skillet and set aside.
  3. Lower heat to medium; add minced garlic to the skillet and sauté until fragrant (about 1 minute). Stir in Cajun seasoning.
  4. Pour in heavy cream, stirring continuously until slightly thickened (3-5 minutes). Gradually add grated Parmesan cheese until melted and smooth.
  5. Add cooked spaghetti and chicken back into the skillet, tossing gently to combine. Adjust consistency with reserved pasta water if needed. Season with salt and pepper.
