  • 500 g potato gnocchi
  • 150 g turkey bacon (or turkey strips)
  • 2 large eggs
  • 60 g grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, bring salted water to a rolling boil. Add the potato gnocchi and cook until they float (about 2–3 minutes). Reserve some pasta water, then drain.
  2. In a skillet over medium heat, add olive oil and cook diced turkey bacon until crispy (about 5–7 minutes). Remove from pan and set aside.
  3. In the same skillet, add minced garlic and sauté on medium-low until fragrant (1–2 minutes).
  4. Add the cooked gnocchi to the skillet with garlic, along with crispy turkey bacon. Remove from heat.
  5. In a bowl, whisk together eggs and Parmesan cheese. Pour over gnocchi mixture while stirring quickly to create a creamy sauce using residual heat.
  6. Season with salt and black pepper to taste. Garnish with fresh parsley.
