Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and grate the zucchini; squeeze out excess moisture.
  3. In one bowl, mix flour, baking powder, baking soda, and salt. In another bowl, whisk together milk, vinegar, egg, and melted butter.
  4. Combine wet ingredients with dry ingredients; fold in zucchini, green onions, and cheddar cheese until just mixed.
