  • 3 pounds chicken thighs (bone-in, skin-on)
  • ⅓ cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon minced garlic
  • 2 teaspoons kosher salt

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, Dijon mustard, soy sauce, honey, minced garlic, and kosher salt. Reserve ¼ cup for later.
  2. Place chicken thighs in a resealable bag or baking dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat (375°F to 400°F). Clean and oil the grates.
  4. Remove excess marinade from the chicken and place it skin-side down on the grill. Cook for about 5 minutes before flipping and basting with reserved marinade.
  5. Continue grilling while flipping every few minutes until the internal temperature reaches 165°F to 170°F (about 25-30 minutes total). Let rest for 5 minutes before serving.
