  • 4 boneless, skinless chicken breasts
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 3 tbsp olive oil (divided)
  • 3 cups baby potatoes, halved
  • Dried rosemary to taste
  • 2 cups cherry tomatoes
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 minced garlic clove

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss halved baby potatoes with 1 tablespoon olive oil, salt, pepper, and dried rosemary in a bowl. Spread them evenly on a baking sheet and roast for about 20–25 minutes until golden brown.
  3. Season chicken breasts with salt, pepper, garlic powder, and paprika. Heat a tablespoon of olive oil in a grill pan over medium-high heat. Grill the chicken for about 5–6 minutes per side until cooked through (165°F internal temperature). Set aside.
  4. In the same bowl used for the potatoes, toss cherry tomatoes with remaining olive oil, salt, and pepper. Add them to the baking sheet during the last 10 minutes of potato roasting.
  5. For the yogurt sauce, mix Greek yogurt, lemon juice, minced garlic, salt, and pepper in a bowl until smooth.
  6. Serve grilled chicken alongside roasted potatoes and cherry tomatoes drizzled with yogurt sauce.
