  • 8 ounces Island Salsa (or any mango-pineapple salsa)
  • 1/3 cup lime juice
  • 1/4 cup olive oil
  • 1 large yellow bell pepper
  • Fresh cilantro (for garnish)

Instructions

  1. In a ziptop plastic bag, combine chicken, salsa, lime juice, olive oil, and black pepper. Seal and marinate in the fridge for at least 30 minutes.
  2. Preheat the grill to medium-high heat and lightly grease the grates.
  3. Toss sliced yellow bell pepper with olive oil, kosher salt, and black pepper in a grill basket.
  4. Grill marinated chicken for about 4–5 minutes on each side until fully cooked (internal temperature should reach 165°F).
  5. Stir peppers occasionally while grilling until tender (about 8–10 minutes).
  6. Serve chicken topped with additional salsa, diced mango, pineapple tidbits, and optional cilantro.
