  • 2 medium zucchini (about 2 pounds)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 can (28 ounces) diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C). Slice zucchini into 1/2" rounds; sprinkle with salt and let sit in a colander for 15 minutes to drain moisture. Rinse and pat dry.
  2. In a large skillet over medium-high heat, heat olive oil. Add onions; cook until softened (about 2 minutes). Stir in garlic and ground beef; cook until browned (5 minutes). Mix in drained tomatoes, Italian seasoning, salt, and pepper; remove from heat.
  3. In an 8×8 baking dish, layer half of the beef mixture, followed by half of the zucchini and half of the cheese. Repeat layers.
  4. Bake for 20 to 25 minutes until cheese is bubbly and golden. Let rest for 10 minutes before serving.
