- 3 cups frozen shredded hash browns, thawed and squeezed dry
- 3 tablespoons melted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 large eggs
- 1/4 cup milk (dairy or plant-based)
- 1/2 cup cooked crumbled turkey sausage or plant-based alternative
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced bell peppers or onions (optional)
- Nonstick spray for muffin tin
- Preheat oven to 375°F (190°C) and coat the muffin tin with nonstick spray.
- In a bowl, mix hash browns with melted butter, salt, and pepper until well combined. Press mixture into muffin cups to form nests.
- Bake nests for 15–20 minutes until golden brown.
- In another bowl, whisk together eggs, milk, cooked sausage, cheese, and optional vegetables.
- Pour egg mixture into baked hash brown nests until filled about three-fourths full.
- Return to oven and bake for an additional 15–20 minutes until eggs are set and slightly golden.
- Cool for 5 minutes before removing from the muffin tin.
