  • 2 very ripe bananas (mashed)
  • 1/4 cup melted butter
  • 1/2 cup Greek yogurt
  • 1/4 cup maple syrup
  • 1/2 cup milk
  • 1 cup grated zucchini (about one medium zucchini)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 and 3/4 cups white whole wheat flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 425°F and prepare a muffin tin with liners or cooking spray.
  2. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  3. In one bowl, mash the bananas and mix in melted butter, Greek yogurt, maple syrup, milk, eggs, and vanilla until smooth. Stir in grated zucchini.
  4. In another bowl, whisk together flour, cinnamon, baking soda, baking powder, and salt.
  5. Gently combine wet and dry ingredients without overmixing.
  6. Fill muffin cups evenly with batter and bake at 425°F for 5 minutes. Then reduce the temperature to 350°F and bake for an additional 20–22 minutes until a toothpick comes out clean.
  7. Cool muffins on a wire rack before storing in an airtight container.
