  • 500g lean beef mince
  • 23 medium potatoes
  • 1½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano or mixed herbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil (divided)
  • Shredded lettuce
  • Optional toppings: cheese, sliced avocados, diced tomatoes

Instructions

  1. Preheat oven to 200°C (390°F). Line a baking tray with parchment paper.
  2. Slice potatoes into thin chips and toss them in a bowl with 1 tablespoon olive oil and half of the spice mix (smoked paprika, garlic powder, onion powder).
  3. Spread potato chips on the baking tray in a single layer and bake for 30–40 minutes until crispy.
  4. Heat remaining olive oil in a frying pan over high heat. Add beef mince and the rest of the spice mix; cook until browned (about 5–7 minutes).
  5. In a small bowl, combine mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika to make the sauce.
  6. Assemble bowls by layering shredded lettuce, crispy potato chips, cooked beef mince, optional cheese, and drizzle with sauce.
