  • 1/2 cup rolled oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup fresh or frozen raspberries

Instructions

  1. Preheat your oven to 350F (175C).
  2. In a large mixing bowl, combine eggs, yogurt, maple syrup, olive oil, milk, and vanilla extract. Mix thoroughly.
  3. Add the all-purpose flour, rolled oats, salt, baking powder, and baking soda to the wet mixture. Stir until just combined; avoid overmixing.
  4. Gently fold in the raspberries.
  5. Spray a muffin tin with cooking spray and divide the batter among the cups.
  6. Bake for 20–25 minutes or until a toothpick inserted comes out clean.
