  • 2 boneless chicken breasts
  • 500g baby potatoes, halved
  • 200g green beans, trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large baking dish, combine halved baby potatoes with 1 tablespoon olive oil, minced garlic, dried rosemary, salt, and pepper. Toss until evenly coated.
  3. Place seasoned chicken breasts on top of the potato mixture. Drizzle with remaining olive oil and sprinkle with paprika, salt, and pepper.
  4. Bake uncovered for 30–35 minutes, or until chicken reaches an internal temperature of 75°C (165°F) and potatoes are golden brown.
  5. While baking, boil green beans in salted water for 3–4 minutes until tender-crisp; drain well.
  6. Let the chicken rest for a few minutes before slicing. Serve with roasted potatoes and green beans garnished with parsley.
