  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 1 cup chicken stock
  • 1 tbsp butter
  • 400g potatoes (peeled & cubed)
  • 68 baby carrots
  • ½ cup heavy cream (optional)
  • Fresh herbs (parsley or thyme)
  • Salt & black pepper
  • 1 tsp garlic powder (optional)
  • 1 tbsp all-purpose flour
  • 2 tbsp butter for mashed potatoes
  • ½ cup milk or cream for mashed potatoes
  • 1 tsp honey or maple syrup for glazed carrots

Instructions

  1. Boil the cubed potatoes in salted water for about 15–18 minutes until fork-tender. Drain and mash with butter and milk until creamy.
  2. In a skillet, heat olive oil over medium-high heat and sear seasoned chicken breasts for 6–7 minutes per side until golden brown. Rest before slicing.
  3. In the same skillet, melt butter, whisk in flour to create a roux, then gradually add chicken stock and simmer until thickened. Stir in the heavy cream and herbs.
  4. In another skillet, sauté baby carrots with butter or oil, honey/maple syrup, salt, and pepper for about 8–10 minutes until tender and caramelized.
  5. Serve the sliced chicken on a bed of mashed potatoes, topped with herb gravy, alongside glazed carrots.
