  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt & pepper
  • 1 tsp garlic powder
  • 150ml heavy cream or coconut cream
  • 2 tsp Dijon mustard
  • 1 tsp dried herbs (thyme or parsley)
  • 2 large potatoes, peeled & cubed
  • 200g baby carrots
  • 1 tbsp honey or brown sugar

Instructions

  1. Begin with the mashed potatoes: Boil the cubed potatoes in salted water until fork-tender (about 15 minutes). Drain, return to pot, and mash with butter and milk until creamy. Season to taste.
  2. Prepare the glazed carrots: In a skillet, melt butter over medium heat. Add baby carrots, honey/brown sugar, and salt. Cook for about 8-10 minutes until tender and slightly caramelized.
  3. Cook the chicken: In a separate skillet, heat olive oil and butter over medium-high heat. Season chicken breasts with salt, pepper, and garlic powder. Sear for about 6-7 minutes on each side until golden brown and cooked through (internal temperature of at least 165°F).
  4. Make the sauce: Remove chicken from skillet and set aside. In the same pan, add heavy cream and Dijon mustard, stirring to combine while scraping up browned bits from the bottom. Simmer for about 2-3 minutes until thickened.
  5. Plate the dish: Serve sliced chicken topped with sauce alongside creamy mashed potatoes and glazed carrots.
