  • 1 large sweet potato, peeled and cubed
  • 2 apples, cored and chopped (skin on)
  • 1 ½ cups oat flour (or whole wheat flour)
  • 1 tablespoon ground flaxseed
  • 1 egg
  • ¼ cup unsweetened applesauce
  • 1 tablespoon coconut oil
  • Optional: dash of cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Steam or boil the sweet potato cubes until tender, then mash and let cool.
  3. Chop the apples into small pieces.
  4. In a large bowl, combine the mashed sweet potato, chopped apples, oat flour, ground flaxseed, egg, applesauce, coconut oil, and optional cinnamon until a dough forms.
  5. Roll the dough into small balls or flatten it to cut into bite-sized pieces.
  6. Place on a lined baking sheet and bake for 25–30 minutes until golden and firm; for softer treats, bake for about 20 minutes.
  7. Let cool completely before serving.
