Ingredients

Scale
  • 1.5 lbs boneless skinless chicken thighs
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 tablespoon oil
  • 1 cup honey barbecue sauce
  • 67 Yukon gold potatoes, thinly sliced
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 ½ cups grated Parmesan cheese
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C). In a bowl, season chicken thighs with paprika, onion powder, garlic powder, salt, and pepper. Drizzle with oil and let marinate while prepping potatoes.
  2. In a saucepan over medium heat, melt butter; sauté minced garlic until fragrant. Whisk in flour to make a roux; gradually add milk to create a creamy sauce. Stir in garlic powder, onion powder, salt, Parmesan cheese, and mozzarella until smooth.
  3. Layer sliced potatoes in a greased baking dish; pour creamy sauce over them. Place seasoned chicken on top and brush generously with honey BBQ sauce.
  4. Cover with foil and bake for 40 minutes; uncover and bake an additional 15–20 minutes until chicken is caramelized and potatoes are tender.
