  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup honey barbecue sauce
  • 6–7 Yukon gold potatoes
  • 2 cups milk
  • 1 ½ cups grated Parmesan cheese
  • 6 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, season chicken thighs with paprika, onion powder, garlic powder, salt, and pepper. Drizzle with oil and let marinate.
  3. In a medium saucepan over medium heat, melt butter and sauté minced garlic until fragrant. Whisk in flour to make a roux; gradually stir in milk and seasonings until thickened. Add cheeses until melted.
  4. In a greased baking dish, layer sliced potatoes and pour the creamy sauce over them. Place marinated chicken on top and brush with honey barbecue sauce.
  5. Cover with foil and bake for 40 minutes; remove foil and bake an additional 15–20 minutes until caramelized.
