  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 3 ½4 cups unbleached all-purpose flour
  • 2 tablespoons extra virgin olive oil
  • 1 ½ teaspoons fine sea salt
  • 1 (28-ounce/794g) can whole peeled San Marzano tomatoes, crushed
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • A pinch of sugar (optional)
  • 1 cup whole milk ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg yolk
  • 2 tablespoons fresh parsley, finely chopped
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste
  • 46 ounces beef pepperoni, thinly sliced
  • 8 ounces low-moisture, whole milk mozzarella cheese, freshly grated
  • ¼ cup freshly grated Pecorino Romano cheese (optional)
  • Fresh basil leaves, for garnish
  • ½ cup honey
  • 12 tablespoons hot sauce
  • Pinch of red pepper flakes (optional)

Instructions

  1. In a bowl, combine warm water, sugar, and yeast. Let it foam for about 10 minutes.
  2. Add olive oil and salt; gradually mix in flour until a shaggy dough forms. Knead until smooth (8–15 minutes). Let rise for 1–1.5 hours.
  3. For the sauce, sauté minced garlic in olive oil, then add crushed tomatoes, oregano, salt, and pepper. Simmer for 20–30 minutes.
  4. Mix ricotta with Parmesan cheese, egg yolk, parsley, minced garlic, salt, and pepper until creamy.
  5. Preheat your oven to the highest temperature with a pizza stone inside for at least 45 minutes.
  6. Roll dough into a circle and spread sauce on top; layer with mozzarella and beef pepperoni followed by dollops of ricotta.
  7. Bake for about 8–12 minutes until crust is golden brown; drizzle with hot honey before serving.
