Ingredients
Scale
2 pounds boneless chicken breasts
1/4 cup olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Juice from 1 lemon
3 cups cooked white rice
2 cups roasted baby potatoes
1 cup cherry tomatoes (halved)
1 chopped cucumber
1/2 cup fresh parsley (chopped)
1 cup Greek yogurt or sour cream
2 cloves garlic (minced)
Instructions
Marinate the chicken: In a bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add chicken breasts and coat evenly; let marinate for at least 30 minutes.
Prepare the roasted potatoes: Preheat oven to 425°F (220°C). Cut potatoes into quarters, toss with olive oil, salt, and pepper. Roast for 25-30 minutes until golden.
Grill the chicken: Preheat grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side until cooked through (165°F internal temperature). Let rest before slicing.
Make the creamy herb drizzle: In a bowl, mix Greek yogurt or sour cream, minced garlic, lemon juice, and chopped herbs until smooth. Season with salt and pepper.
Assemble the bowls: Layer cooked rice in bowls, top with sliced grilled chicken, roasted potatoes, cherry tomatoes, cucumber, and drizzle with herb sauce.
