  • 0.75 pound boneless skinless chicken breast, sliced
  • 2 cups fresh broccoli florets
  • 1/2 tablespoon minced garlic
  • 1/2 tablespoon minced ginger
  • 3 tablespoons avocado oil (or neutral oil)
  • 1 teaspoon sesame oil
  • 1/2 tablespoon light soy sauce
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon mushroom sauce (or oyster sauce)
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon rice apple vinegar
  • 1 tablespoon brown sugar
  • 1.5 tablespoons cornstarch mixed with water (slurry)
  • 2/3 cup water (divided)

Instructions

  1. Marinate chicken slices in a bowl with sesame oil and light soy sauce for flavor.
  2. Set Instant Pot to SAUTE mode, add avocado oil, and heat. Sauté ginger and garlic until fragrant.
  3. Add marinated chicken to the pot; brown lightly for about 3–4 minutes.
  4. Pour in 1/3 cup water to de-glaze the pot, scraping up browned bits.
  5. Secure lid, set valve to SEALING, and cook on HIGH pressure for 1 minute.
  6. Perform a Quick Pressure Release once cooking is finished.
  7. In a bowl, mix together remaining sauce ingredients; add to the pot and stir well.
  8. Set Instant Pot back to SAUTE on LOW heat, stirring until the sauce thickens (3–5 minutes).
  9. Add broccoli florets; cook until bright green and tender-crisp (2–3 minutes).
  10. Allow to rest before serving over rice or noodles.
