  • 12 tortillas (flour or corn)
  • 3 russet potatoes
  • 1 cup shredded cheddar cheese (preferably Irish)
  • 1 pound deli corned beef (thinly sliced)
  • 1 cup chopped cabbage
  • ½ cup Thousand Island dressing
  • ½ sweet onion (sliced)
  • Oil (for frying)
  • Fresh chives (for garnish)

Instructions

  1. Begin by washing, peeling, and cubing the potatoes. Boil them in salted water for about 10 minutes until tender.
  2. In the same pot, briefly cook chopped cabbage and sliced onions for about 5 minutes until softened. Drain and set aside.
  3. Mash the cooked potatoes in a bowl, mixing in the cheddar cheese until smooth.
  4. Heat a skillet over medium heat and prepare tortillas by brushing one side with Thousand Island dressing.
  5. Spread mashed potato mixture on half of each tortilla, followed by layers of corned beef, cabbage, and onions. Fold to enclose the filling.
  6. Fry each taco in heated oil for approximately 30 seconds per side until golden brown.
  7. Remove from the skillet and drain excess oil on paper towels; garnish with freshly chopped chives.
