  • 16 ounces Italian sausage
  • 1/2 medium onion (chopped)
  • 34 cloves garlic (minced)
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh baby spinach
  • Salt & pepper (to taste)

Instructions

  1. In a soup pot or Dutch oven, brown the Italian sausage over medium-high heat for about 5 minutes.
  2. Add chopped onions and continue cooking until softened, about 5 minutes.
  3. Stir in minced garlic and uncooked orzo; cook for another 30 seconds.
  4. Pour in chicken broth and heavy cream; bring to a simmer and cook uncovered for 10 minutes, stirring frequently.
  5. Remove from heat, stir in grated parmesan cheese and fresh spinach, cover for 3–5 minutes until thickened. Season with salt and pepper to taste.
