  • 1 lb large shrimp (deveined and patted dry)
  • 12 scotch bonnet peppers (finely chopped)
  • 1/2 small onion (finely chopped)
  • 5 cloves garlic (minced)
  • 1 bunch fresh thyme (56 sprigs)
  • 2 tbsp butter
  • 2 tbsp vegetable oil

Instructions

  1. In a large mixing bowl, combine shrimp with vegetable oil, scotch bonnet pepper, onion, garlic, thyme, and spices. Marinate for 15–20 minutes.
  2. Heat vegetable oil in a skillet over medium-high heat. Add the marinated shrimp and cook until pink and firm.
  3. Stir in butter and cook for another 2–3 minutes until fully coated in sauce. Serve hot.
