  • 1/4 cup panko breadcrumbs
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp fish sauce (or soy sauce for an alternative)
  • 1 tsp soy sauce
  • 2 green onions, finely chopped
  • 1 tbsp chopped fresh cilantro (or parsley)
  • 1 egg
  • Pinch of salt and pepper
  • 1 tbsp oil for frying
  • 1 tbsp oil for curry sauce
  • 2 cloves garlic, minced
  • 1 tbsp Thai red curry paste
  • 14 oz can full-fat coconut milk

Instructions

  1. In a large mixing bowl, combine ground chicken, panko breadcrumbs, minced garlic, grated ginger, fish sauce (or soy sauce), soy sauce, green onions, cilantro (or parsley), egg, and a pinch of salt and pepper. Mix gently until just combined.
  2. Form the mixture into small meatballs (about two tablespoons each) and place them on a plate.
  3. Heat oil in a large skillet over medium-high heat. Add the meatballs in batches and cook for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add more oil if needed and sauté minced garlic for about 30 seconds. Stir in Thai red curry paste followed by coconut milk. Bring to a simmer.
  5. Gently add the cooked meatballs back into the skillet, ensuring they are submerged in the sauce. Simmer uncovered for about 10-15 minutes until heated through.
