  • 45 medium Russet Potatoes
  • 1 cup Duke's Mayonnaise
  • 4 Hard Boiled Eggs (chopped)
  • 1 Yellow Onion (diced)
  • 1 tsp Yellow Mustard
  • Dill Pickle Cubes (about half a small jar plus some juice)
  • Salt and Pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the potatoes in salted water for about 45 minutes until tender. Allow to cool, peel, and cube.
  2. Boil eggs for 10 minutes; let sit in cold water before peeling.
  3. In a large mixing bowl, combine cubed potatoes, chopped eggs, diced onion, dill pickle cubes with juice, mustard, mayonnaise, salt, and pepper. Mix well.
