  • 1 1/2 lbs boneless, skinless chicken thighs
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Chopped green onions (optional garnish)

Instructions

  1. Cut chicken into 1.5-inch cubes and place in a bowl.
  2. In another bowl, whisk together ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang to make the marinade.
  3. Pour half the marinade over chicken; mix well and marinate in the refrigerator for at least 4 hours or overnight.
  4. Preheat grill to medium heat; skewer marinated chicken pieces.
  5. Grill skewers for about 10-12 minutes, turning every few minutes until cooked through (internal temperature should reach 165°F). Baste with remaining marinade during grilling.
  6. Serve hot with chopped green onions on top.
